This week! Am I right?
Our family made it through Hurricane Sandy unharmed. We never even lost power.
It saddens my heart to watch the news and see what some folks in the upper east coast states are having to endure. Many have lost much and so many people are still in the dark.
Jenn over at Jenn Cuisine has asked food bloggers to unite this week and post a recipe that “you would make for someone in need, to help them feel at home”…a comfort food, if you will.
But eventually I settled on my mother’s brownie recipe. Like her chocolate chip cookies (which I posted about a while back), she made these every holiday and birthday. She baked big batches of these at Christmas and distributed them to the people she cared for. It was my mother’s way of giving a hug wrapped in a fudgy, decadent, nutty brownie. These brownies always feel like home to me.
This blog is about healthy eating with the freshest ingredients. This blog is not, however, about denying yourself. If there is a recipe that you love, that your family loves, that means something to your heart…then you should make it (in moderation, if it is on the decadent side). Use the best ingredients you can find. Use real butter, if it’s called for.
So pull up a chair and let me pour you a tall, cold glass of milk.

Jenn has suggested linking up to the American Red Cross for donations (which I did last Friday), but today I’m going to encourage you to consider donating to another organization, Occupy Sandy. They are an independent (read non-government) organization helping people, primarily through Twitter, at a highly personal and urgent level. For example, they tweet exact locations and neighborhoods where people need food, batteries, and other supplies. If you live in NYC or the surrounding areas, you may want to follow them on Twitter for ways in which you can assist.
*This recipe makes a generous 9″ x 13″ pan of brownies. If you like, you may reduce this recipe by half to make a 9-inch square pan and reduce baking time to 45-50 minutes, or until finished
8 ounces organic bittersweet chocolate
2 cups butter
4 cups organic unrefined sugar (I use Wholesome Sweeteners brand)
6 eggs, lightly beaten
2 tsp vanilla extract
2 cups sifted all-purpose unbleached flour
1/2 tsp salt
2 cups chopped walnuts or pecans (optional)
Preheat oven to 350 degrees. Grease a 9″ x 13″ rectangle baking pan (I use an olive oil cooking spray)
melt chocolate and butter over low heat, preferably in a double boiler, stirring until just melted completely. Remove from heat and set aside to cool for a few minutes.
In a large bowl, combine sugar, eggs, and vanilla extract. Mix until blended. Add chocolate and butter mixture to bowl and mix to blend. Combine flour and salt in a separate bowl and slowly add to chocolate mixture, a half cup at a time, until completely blended in. Fold in nuts, if using.
Pour mixture into prepared pan and bake 65 minutes or until toothpick inserted in center comes out clean. Remove from oven and place on rack to cool before cutting into squares.
